Confetti Cupcakes

Very simple recipe for the most amazing tender and moist confetti cupcakes. These are great for any occasion, they are my go to! Vanilla cupcakes with rainbow sprinkles.

Ingredients

  • 1 1/2 cup all purpose flour 180g
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 8 tbs butter melted (113g)
  • 1 cup sugar 225g
  • 2 eggs room temperature
  • 1 egg white
  • 1/2 cup milk room temp. (114g)
  • 1 tbs vanilla
  • 1/3 cup rainbow sprinkles

Instructions

  • Preheat the oven to 350°. Line two cupcake pans with paper liners. Set aside.
    In a mixing bowl, combine the flour, baking powder and salt. Mix together and set aside.
    In another mixing bowl add the butter and sugar and whisk to combine. Mix in the eggs and egg white. Stir in the milk and vanilla. Add the dry ingredients and mixing just until incorporated. Fold in sprinkles.
    Divide the batter between the pans, fill each about 2/3 of the way full.
    Bake 18-22 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pans 5-10 minutes. Frost cooled cupcakes as desired.
