Lemon Poppy Seed Muffins

Ingredients

  • 2 Cups All Purpose flour 254g
  • 3/4 Cup Sugar 150g
  • 2 Tbs Poppy Seeds
  • 1 Tbs Baking Powder
  • 1/2 tsp Baking soda
  • 1/2 Tsp Salt
  • 1 cup milk room temp 237g
  • 1 stick butter melted and cooled
  • 1 egg room temp
  • 2 tbs lemon juice
  • 1 1/2 tbs lemon zest

Instructions

  • Get 2 bowls, in one add the dry ingredients, flour 254g, 150g sugar, 2 tbs poppy seeds, 1 tbs baking powder, 1/2 tsp baking soda, 1/2 tsp salt, mix.
  • In the second bowl, add the wet ingredients, the milk 237g 1 stick melted butter, 1 egg, 2 tbs lemon juice, 1 1/2 tbs lemon juice, mix.
  • Add in flour mixture, mix gently until just combined. Place in fridge overnight.
  • Preheat oven to 400 degrees.
  • Muffin liners are optional, but do help with the cleanup.
  • Bake for 15-20 minutes. Until edges are golden brown.
  • You can top with a glaze, just 1 cup powdered sugar and 1 1/2 tbs lemon juice!
