Ingredients
  

  • 2 Cups All Purpose flour 254g
  • 3/4 Cup Sugar 150g
  • 2 Tbs Poppy Seeds
  • 1 Tbs Baking Powder
  • 1/2 tsp Baking soda
  • 1/2 Tsp Salt
  • 1 cup milk room temp 237g
  • 1 stick butter melted and cooled
  • 1 egg room temp
  • 2 tbs lemon juice
  • 1 1/2 tbs lemon zest

Method
 

  1. Get 2 bowls, in one add the dry ingredients, flour 254g, 150g sugar, 2 tbs poppy seeds, 1 tbs baking powder, 1/2 tsp baking soda, 1/2 tsp salt, mix.
  2. In the second bowl, add the wet ingredients, the milk 237g 1 stick melted butter, 1 egg, 2 tbs lemon juice, 1 1/2 tbs lemon juice, mix.
  3. Add in flour mixture, mix gently until just combined. Place in fridge overnight.
  4. Preheat oven to 400 degrees.
  5. Muffin liners are optional, but do help with the cleanup.
  6. Bake for 15-20 minutes. Until edges are golden brown.
  7. You can top with a glaze, just 1 cup powdered sugar and 1 1/2 tbs lemon juice!
